Baked Eggplant with Ground Beef – Ingredients (Serves 2)
- 1 large eggplant
- 250g ground beef
- 1 cup tomato sauce
- 1 tbsp olive oil
- 1/2 onion
- 2 cloves garlic
- Salt, pepper
Instructions
- Preheat oven to 190°C
- Prepare eggplant
Slice and lightly bake for 15 minutes.
- Cook beef
Cook beef with onion and garlic.

Stir in tomato sauce and simmer briefly.
